The knife is also completely tapered from spine to edge, creating a V-shaped blade that glides through cuts with ease. Made in Japan with a 25-year warranty, this knife has 57-61 Rockwell hardness (harder than most other knives), 15° blade angle and the perfect balance of weight distribution.
