It is breathable and hygroscopic, which is a long way of saying it wicks the wet and the gunge away rather than trapping it against the hoof. Wool absorbs many times its own weight in moisture without feeling wet, and keeps letting air through while it does it. Wash it, dry it, use it again. When it finally gives up, it composts.
