An aloo chole is a tasty curry made with potato & chickpeas this seasoning packs the flavours of the traditional Punjabi curry into one easy step. This seasoning can be used in any other curry recipe. Drain 250g chickpeas, submerge in fresh water and simmer with 2 bay leaves for around 15 minutes or until tender. In a separate pan, heat oil and cook 1 large onion until soft, add 50g aloo chole masala and 2 large tomatoes, cook for a further 5 minutes. Add the chickpeas, 2 potatoes and a cup of the chickpea liquid to the pan, simmer for 20-30 minutes. Garnish with a squeeze of lemon and fresh coriander, add a dollop of cream or yoghurt if you prefer a creamier texture.
