This is a dry, fresh and crisp white wine has ripe and rich tropical fruit flavours. Serve with smoked fish, seafood and creamy poultry of veal dishes. Marcus' fishcakes are flavour-packed and tender and rather than swamping them with a rich white wine I prefer to enhance their herbal and citrus side with a rapier-sharp, pinpoint accurate Sauvignon Blanc.
