Islay single malt aged 31 years in a sherry cask, distilled 1987 and bottled 2018. Limited single-cask release at 41.7% ABV, 551 bottles, offering dried fruit, nuts, coastal notes and maritime elegance. Bunnahabhain Wemyss Malts - Heather & Leather Single Cask 31 year old 41.7% ABV Nose: The nose conjures a highland wilderness with heather, gorse flowers and crisp autumn leaves. Old fashioned leather walking boots and wax jackets evoke a hike in the Scottish Highlands. Palate: The beginning flavour is a deep sweetness like honey and demerara flapjacks. Savoury flavours appear as meaty and almost leathery whilst herbal notes of caraway and dried rosemary appear. Finish: The finish has a gentle smoke like flavour derived from the wood tannins.
