Matured in bourbon barrels and sherry butts for 14 years, then finished in a first-fill Pedro Ximénez casks for 16 years, to give generations of rich and elegant dried fruit flavours. Pedro Ximénez is a dark Spanish fortified sweet sherry wine made from white grapes in specific regions, making each oak sherry butt incredibly rare and sought-after. The result is a unique dark rich gold whiskey, treacle toffee on the nose, then velvety smooth raisins and figs with hints of clove and orange peel on the tongue.
