Ample and round on the palate, with plenty of character Alexis Cornu: “Le Pigeonnier from the Saint-Roux farm is an organic yet contemporary Provençal rosé. Its wide-ranging grape varieties guarantee a certain consistency and regularity, vintage after vintage. Its fresh colour and bouquet is owed to patient night harvesting, followed by long cold stabilization to allow the lees to do their work. Finally, the juices are heated and fermented at 14 to 18°C to stimulate varied aromatic expression. The wine is aged on lees for a few months, then bottled at the end of winter.”
