WIDE UDON NOODLES — FIRM KOSHI TEXTURE — THIRD-GENERATION ARTISAN PRODUCER — Satisfying, versatile wide udon noodles made by a third-generation artisanal family producer in Japan's Gunma prefecture, where they have been producing noodles for over 70 years. The noodles are slow dried to give them a firm texture the Japanese call koshi. Made with just two ingredients: organic wheat flour (97%) and sea salt. Egg free and certified organic. SLOW DRIED AT LOW TEMPERATURES — NOT ARTIFICIALLY DRIED — Traditional, slow dried organic noodles from Japan. Dried at low temperatures (ranging from 28–48 degrees) rather than artificially dried at 60–80 degrees. The slow air drying and maturing process concentrates the flavour and develops the firm koshi texture. Combined with their experience and craftsmanship, the producer is able to produce consistently good quality noodles throughout the year in different seasons, temperatures and humidity. ROLL & CUT METHOD — NOT FORCE EXTRUDED — Authentically made using the traditional roll and cut method, not by the conventional force extruded method. The dough is mixed at low temperatures for an hour and a half in a custom-made super mixer, which promotes rapid gluten formation — creating the firm koshi texture similar in style to the very traditional hand-kneaded Teuchi udon. SALT IS A TRADITIONAL PART OF MAKING UDON — NOT AN ADDITIVE — Salt is a traditional part of making udon — it helps create the chewy texture and acts as a natural preservative, so no artificial additives are needed. While the pack shows the salt level in the dry noodles, after cooking most of it stays in the water, leaving just 0.22% in the noodles you eat. Free from artificial ingredients, processing aids and preservatives. VERSATILE — HOT BROTHS, STIR-FRIES & NOODLE SALADS — Serve all year round in hot broths, stir-fries or noodle salads. To prepare: bring plenty of water to the boil, add noodles (100g per serving) and stir. Simmer for 10 minutes then rinse briefly under cold water. Certified organic, egg free and suitable for vegans.
