TASTING NOTES - Fragrant, appealing and aromatic. Rose petals, dark cherries and blackberries fill the nose. Palate, a core of rounded bramble fruit, ripe boysenberry and wild strawberry is unpinned by silky tannins and fine acidity. A concentrated yet elegant wine. PAIRING - It matches with a wide variety of foods, including lighter game meats (duck, rabbit), lamb, roasted vegetables, berries, herbs and almost anything chargrilled. PROCESS - The grapes are de-stemmed and put into open-top fermenters with wild yeast. Once the wine is pressed, it’s matured in French oak for 11 months.
