Coley, also widely known and sold as saithe or coalfish, is a white fish with a mild, clean and slightly buttery flavour. One order delivers a single pack of coley weighing 1 kg, with a tolerance of plus or minus 10%, so expect between 900 g and 1.1 kg. The raw flesh is a darker grey or off-white colour that cooks to a bright white, and the cooked flesh is firm with large, easily separated flakes. Suitable for frying, baking or poaching, and can be used in place of cod or haddock in recipes such as fish and chips, fish cakes and curries. Do not refreeze once thawed. At 1 kg, the pack is a practical size for family meals or for cooking several dishes in one session.
