Harts of Stur The limited edition Global G-106 24cm Kiritsuke Knife was originally produced and presented to the 12 judges of the 2022 Roux Scholarship competition. Now Global have released a limited run of just 500 of these outstanding knives, allowing you to join esteemed chefs Michel Roux Jr. and Alain Roux in being able to own your own version of this knife.Many Japanese knife manufacturers produced a specialist knife with one-sided grinding known as 'Kiritsuke'. In many cases only the head chef of a Japanese restaurant was allowed to use one due to the considerable skill required to use it effectively. Global have fed off this tradition and engineered a double-edged version of the Kiritsuke as part of their Classic series. The end result is a highly versatile knife that can be used to perform most tasks normally done with a chef's knife (or Gyuto knife) and those of the Nakiri and Sujihiki. With less curvature than a typical Gyuto knife, it is less suited for chopping using a rocking action but is perfect for cutting with a push-pull action. The reverse Tanto tip (an iconic feature of a Kiritsuke knife) is particularly suitable for fine dicing and chopping.As with all Global Classic knives, the limited edition Kiritsuke knife is crafted from high quality Cromova18 stainless steel and ice hardened to Rockwell 56-58. The blade features an acute 15° cutting edge which holds its razor sharp edge for longer, yet is easily sharpened when required. The hollow handle is filled with sand to provide excellent balance whilst the classic Global dotted handle provides a secure grip. Smooth contours and seamless construction eliminate food or dirt traps, offering the ultimate in safety and hygiene.Cleaning Global knives is straightforward and easy - simply wash immediately after use in warm water with a mild detergent. Dry with a soft cloth.The Global G-106 24cm Kiritsuke Knife is supplied with an extended 35 year Global warranty.  Knives are not for sale to persons under the age of 18. - all knives and bladed products are delivered by Age Verified Delivery (AVD). The carrier may request proof of age in order to deliver your parcel. If proof of age is not available, or the recipient is underage, the carrier will refuse to deliver.

Kitchen Knives

Feeding off this tradition, Global® Knives proceeded to engineer a Double-Edged version of the Kiritsuke in their Classic series to fashion a very versatile knife. This knife can be used to perform most of the tasks normally done with a Gyuto or Chef’s Knife, but also those of the Nakiri and Sujihiki. It has less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting action.
