The Global G-106 24cm Kiritsuke Knife is a limited edition, double-edged multi-purpose blade inspired by traditional Japanese knives. Originally developed for the Roux Scholarship judges, this 500-unit run combines versatility with refined craftsmanship: its blade, made from Cromova18 stainless steel, is ground to a 15° edge for long-lasting sharpness, and the hollow, sand-filled handle provides balanced handling. Less curved than a typical Gyuto, it supports a push-pull cutting action and is suitable for tasks across Gyuto, Nakiri, and Sujihiki roles. The knife embodies Global’s Classic series design, with a one-piece construction, hygienic profile, and a distinctive Global dotted handle. It is made in Japan and carries an extended warranty, reflecting its limited статус and crafted heritage.
