SAVOURY - Unlike the sweetened mochi filled with red bean paste found in the refrigerated section of Japanese supermarkets, kiri mochi is unsweetened and commonly enjoyed in savoury dishes VERSATILE - You can simmer kiri mochi in umami-rich dashi stock to make ozoni soup, a traditional dish enjoyed on New Year's Day in Japan. Alternatively, you can simmer and then fry the mochi, creating a crispy exterior and a chewy interior. This versatile ingredient pairs well with a fried egg, can be included in an okonomiyaki omelette, or wrapped around sweetened red bean paste for a delightful treat. HOW TO COOK - To cook kiri mochi, bake it in the grill for about four to five minutes until the surface is browned. Turn off the grill and leave the mochi inside for another two minutes to soften the center. Alternatively, you can simmer it in hot water for two minutes until soft or microwave it for a few minutes.
