A tasty Thai inspired curry packed with authentic flavours. Heat oil in a pan and add the onions, peppers, garlic & ginger, cook for 4-5 mins. Add the curry powder, peanut butter and cook for a further 2 mins. Add a the cornstarch to a small amount of coconut milk and mix until combined, add the remaining coconut milk to the pan and mix well. Add the cornstarch mixture to the pan and stir till combined, add the chicken and simmer for 10-15 minutes until cooked through. Stir in the sugar, lime and fish sauce, season with salt & pepper.
