TASTING NOTES: Roasted agave flavours mingle with notes of sun-baked clay, complemented by herbal pine undertones and white pepper; Hints of smoke, with a subtle sweetness lingering on the palate; These flavours are a faithful reflection of the landscape in which these agave plants thrive; Balanced and approachable, this Espadín has a traditional 45 Percent ABV ROOTED IN OAXACA: Julio and his family grow every agave used in the production of our mezcals, ensuring complete control over the cultivation process, a commitment that allows them to maintain robust biodiversity on their lands; They oversee the growth and flowering of various agave species, supporting a thriving ecosystem with food and habitat for pollinators like bats and other wildlife PATIENT, TIME HONOURED PROCESS: Mature agave hearts are traditionally pit-roasted over several days, followed by milling; Spring water is added to the fibers which are left in open air wooden vats where a wild-yeast fermentation takes place; a double distillation in copper pot stills follows before the liquid is blended using the heads, hearts and tails before a final month resting; a patient, time-honoured process that preserves the traditional flavours QUALITY YOU CAN TRUST: Established in 2012 with families that have been producing traditional Mezcals on their lands for generations; All of our products are handmade to order, celebrating local customs and flavours; We are committed to producing our Mezcals with a strong sense of social responsibility towards the local communities SERVE NEAT OR MIX: Traditionally, Mezcal is drunk neat, without ice, accompanied by orange and chilli worm salt and a cold beer, or paired with food.
