Jelinek – established in 1894 – is one of the oldest producers of authentic slivovitz in Eastern Europe, in the Moravian region of the Czech Republic, where spirits have been produced for over four hundred years. In a unique process, plum pits remain in the mash during fermentation, infusing it with tannins and giving the spirit a unique almond flavour before a traditional triple distillation and ageing in steel tanks.
