THE GIN: distilled in Edinburgh using the London Dry method with 14 botanicals, including oolong white tea from the Halmari estate in Assam. Juniper, caraway and black pepper, with a soft floral tea finish. THE RUM: made from Caribbean molasses, aged in ex-sherry casks for a deep ruby character, then married with white oolong tea from Assam. Warm chai spice and a rich, smooth finish. Lovely over ice.
