SIMPLE INGREDIENTS: There are just two ingredients inshochu—locally grown Calrose rice and koji, which converts rice starch into sugars that can be fermented into alcohol. Simple ingredients, complex and intricate flavour. THE PROCESS: Fermenting Calrose with koji reveals a panoply of dynamic aromas and careful distillation oncustom pot stills enhances these while developing a lovely mouthfeel. If you’ve ever had sake, there are some similarities to the flavour profile. SUGGESTED SERVES: St. George California Shochu works beautifully in a Highball and is refreshing in sour cocktails. Thanks to its 40 Percent ABV, it can even substitute for vodka, gin or light rum in some of your favourite cocktail recipes.
