There are various types of lentils, but Brown, Red, Green, and Yellow lentils are the most widely used in cooking. Don't be deceived by their names; the last two are Split peas, a sort of "Field Pea." HIGH-QUALITY INGREDIENTS: Green Split Peas have a slight natural sweetness as well as a nutty, earthy flavour. They are an excellent source of fibre and vitamins. Lentils, like split peas, have minerals and are a wonderful source of protein. Green lentils from France are prized for their greater flavour and the fact that, while taking longer to cook, they remain together better during the cooking process. Green Split Peas are organic, GMO-free, and suitable for vegans. INSTRUCTION FOR USE: Green split peas are wonderful for making soups, casseroles & traditional Indian dishes like tarka dahl, kitcheri & aromatic stews. To Cook: 1. Rinse 2. Soak for 4-6 hours (or overnight). 3. Boil for 20-60 minutes depending on the recipe and ensure that there's always water in the pot.
