Honey Sloe Flavoured Gin Liqueur – We start by making a simple but flavoursome gin with plenty of juniper. We add sloes and a subtle recipe of orange and lemon zest, cinnamon, clove and nutmeg then allow to gently steep for at least three months Spiced Berry Compote On The Nose – Cherries, plums, cinnamon and nutmeg, with piney, citrusy gin and a gentle earthiness Rich And Thick On The Palate – A balance of sweet and sour berries over a spiced honey base, with cherries, plums and tart berries, and hints of cherry menthol and dark chocolate that develop as it sits A Lingering Finish – Sticky cherry and a touch of menthol, ending with lingering pine. A rich, warming Cornish sloe gin to savour slowly Born To Be Enjoyed – A month before bottling we gradually add sweetness to bring out the rich, dark red-berry flavours of the sloes but not too much, that would hide their natural dryness, then finish with Cornish Wildflower honey from local hives around Cornwall How To Enjoy – Sip it neat, or from a hip flask on a winter’s walk.
