WILD MAGUEY MEXICANO — Agave rhodacantha is hard to find and slow to ripen, needing well over a decade, and this bottling was distilled by Adrian Bautista in Rio de Ejutla, Oaxaca COCOA AND SWEET SPICE — Fermented fruit and Mexican chocolate on the nose, then cinnamon, allspice and a flicker of red chilli across a thick, mouth coating body that finishes dry COPPER LINED STILLS — Pinas are baked in an earth oven, crushed by stone, fermented in wooden vats on wild yeast and run twice through small handmade stills with nothing added at any point DRINK IT SLOWLY — Serve neat at room temperature in a copita with no ice, and let the cocoa side come through beside mole negro, grilled pork, aged cheese or dark chocolate after dinner AN EASY ENTRY POINT — Richer and sweeter than most wild agave bottlings, so the 70cl bottle suits someone curious about mezcal as much as a seasoned collector, and it makes a fine birthday present
