TRADITIONAL HARVEST & COLD EXTRACTION - Harvested every November using traditional sticks to gently shake the trees (always with care for bird nests), while the olives are collected and selected by hand. Production begins immediately at our family olive mill. Cold extraction is performed below 27°C using mechanical methods only, ensuring the olives remain juicy and produce a fresh, highly aromatic juice. The olive oil is stored in nitrogen-sealed stainless steel tanks in a climate-controlled facility. FAMILY, HONESTY & TRANSPARENCY - We analyze every batch and publish the laboratory results here. We are always available to answer any questions you may have. We chose this metal tin because it protects the olive oil from light and temperature, helping preserve its quality until it reaches you.
