ORGANIC & LAB-TESTED – Certified organic extra virgin olive oil (GR-BIO-01) made from 100% Koroneiki olives – unblended and from a single origin in Phaistos, Crete. Every batch is lab-analysed: over 800 mg/kg polyphenols, naturally high in vitamin E and acidity of max. 0.2%. You can check the lab analysis before you buy. PHAISTOS, CRETE – FROM ONE PLACE ONLY – This oil comes from a single place: our organic olive groves near Phaistos, home of the Minoan palace, in the Messara plain of southern Crete between Mount Psiloritis and the Libyan Sea. Here sun, soil and sea air give the Koroneiki olives their character – which is why you will not find this oil anywhere else. Harvested early in October and November, sorted by hand and taken to our family mill the same day. COLD EXTRACTED BELOW 27 °C – Produced by mechanical methods only, with slow malaxation on a dedicated production line used exclusively for organic olive oil. The oil is then stored in separate stainless steel tanks under nitrogen in a climate-controlled room to preserve its aroma and polyphenols. FRUITY & INTENSE – Deep green colour, velvety texture, the aroma of fresh olives, gentle bitterness and a light tingle at the back of the throat – typical of an early harvest organic olive oil with high polyphenol content.
