Distinctive Features: The large, round, refined Sovrana maintains the characteristics of the original variety such as sustained acidity and a soft and fruity palate. Balsamic hints complete the organoleptic range, for a perfectly balanced and extremely pleasant red wine, which draws inspiration from the soils of Barolo and is enriched thanks to the rigorous aging in barriques and large casks. Vinification: The carefully selected grapes are de-stemmed and left to ferment in stainless steel for about 10-12 days. After a malolactic fermentation, 30-40% of the entire mass enters French oak barrels, where the grapes are refined. The remainder will complete the maturation in large wooden barrels. After assembly and a further rest in stainless steel tanks, the wine is bottled and left to refine.
