Manor Springs Organic Wholemeal Flour's "strong" feature comes from the fact that It's milled from harder varieties of wheat, giving it a higher protein content than other wheat flours such as all-purpose flour and pastry flour. It is ideal for making all types of breads – from baguettes to bloomers to ciabatta to sourdough loaves – as well as chewier baked goods such as bagels and pretzels. Thanks to its bran content, which gives this flour more fibre than strong white flour, the effectiveness of its gluten content is reduced, so breads and other goods baked with it will not rise as much as those made with white flour.
