After years of effort, the estate has been restored to its original splendour to produce extraordinary wines IDEAL FOR VINES: Principi di Butera covers 320 hectares with 170 planted with vines. The vineyards, nurtured with a coastal breeze, enjoy idyllic conditions for growing a variety of local grapes, used to create wines filled with sunshine SYMPOSIO ROSSO: A red blend with a deep ruby colour made from Cabernet Sauvignon, Merlot and Petit Verdot grapes, it is full-bodied with medium tannins and offers a nose of small berries and chocolate notes followed by hints of spice and fresh balsamic A BLEND OF GRAPES: Harvested during different periods to ensure the best selection, the grapes are separated by varietal for fermentation with a 30-day maceration period. The blend is aged in barrels for 18 months followed by additional bottle ageing A WELL-STRUCTURED WINE: A good degree of acidity and smooth tannins follow the irrepressible structure of a palate that can be readily paired with refined meat dishes or classic Sicilian cuisine such as aubergines in a rich marinara sauce or stuffed beef
